Soft Sugar Cookies

I was born in Africa and grew up enjoying cardamom. Through the years, I've experimented with this herb in a variety of recipe. I hope you enjoy these old-fashioned sugar cookies.鈥擬abel Shirk, Fair Play, South Carolina

SERVINGS: 36

METHOD: Baked

TIME: Prep: 15 min. Bake: 10 min./batch

Ingredients:

1 cup butter, softened

2-1/4 cups sugar, divided

2 eggs

5 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1-1/2 teaspoons ground cardamom, divided

1/2 cup milk

Directions:

In a large bowl, cream the butter and 2 cups of the sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda, baking powder and 1 teaspoon of the cardamom; add to creamed mixture alternately with milk. In a small bowl, combine the remaining sugar and cardamom; dip rounded teaspoonfuls of dough into sugar mixture. Place on greased baking sheets. Bake at 375掳 for 10-12 minutes or until lightly browned. Cool on wire racks. Yield: about 6 dozen.
This is my favorite recipe, adapted from The Wooden Spoon Cookie Book. I like it because you don't have to roll out the dough---just drop it onto the baking sheets. The nutmeg makes all the difference in the world. Sometimes I don't even bother making the frosting.

Also: If you have no buttermilk, no worries, I never do: just put about 1/2 a teaspoon of apple cider vinegar in your measuring cup, fill it with milk to the 1/2 cup mark, and let it sit for about five minutes before adding it in.

Soft Sugar Cookies

Yield: 3 1/2 dozen 2-inch cookies

1/2 cup (1 stick) unsalted butter, softened

1/2 cup granulated sugar

1/2 cup powdered sugar

1 large egg (preferably at room temperature--prevents curdling)

1/2 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon freshly ground nutmeg

1/2 cup buttermilk

For the frosting:

2 tablespoons unsalted butter, softened

1 teaspoon vanilla extract

dash of salt

2 cups powdered sugar

2 to 3 tablespoons milk

1. Preheat oven to 350潞F. Lightly grease 2 baking sheets, or line with parchment paper.

2. In a large bowl, using a wooden spoon (or mixer on medium speed), beat the butter with the granulated sugar until soft and creamy. Add the powdered sugar and beat again. Add the egg and vanilla and beat until smooth.

3. Stir together the flour, baking powder, baking soda, salt, and nutmeg. Add alternately to the butter mixture with the buttermilk, beginning and ending with the dry ingredients (3 parts dry ingredients, 2 parts buttermilk), until well mixed.

4. Drop the dough by rounded teaspoonfuls onto the baking sheets, leaving 2 inches between the drops. Bake for 8 to 9 minutes (it鈥檚 a good idea to rotate the pan halfway through), or until just the bottoms are lightly browned; the tops of the cookies should remain pale. Transfer to wire racks to cool.

5. To prepare the frosting: In a small bowl, blend the butter with the vanilla, salt, and half the powdered sugar. Blend in half the milk. Add the rest of the powdered sugar, and then, while beating the mixture, add just enough milk to make it spreadable. Frost the cookies when they have cooled completely.
Ingredients

2 cups flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

6 tablespoons unsalted butter

1/3 cup vegetable shortening

3/4 cup sugar

1 egg

1 tablespoon whole milk

1 1/2 teaspoons pure vanilla extract

Method

Preheat oven to 350掳. Line a cookie sheet with parchment paper.

Stir together flour, baking powder and salt. In a large mixer bowl beat butter until butter is softened.

Add sugar and beat until fluffy add egg milk and vanilla and beat well. Add flour mixture and beat until well mixed. Divide dough in half. Cover and chill at least 3 hours or until easy to handle. Roll dough 1/8 inch thick. Cut with your favorite cookie cutters. Place on cookie sheet and 7 to 8 minutes. Remove from oven. Cool on pan 5 minutes. Remove to cooling racks and let cool completely before frosting, if desired.

Makes 36 to 48 cookies.

Creamy Icing

In a small bowl beat 1 egg white, 2 teaspoons lemon juice or vanilla. and enough powdered sugar [1 1/2 2 cups] to make icing of piping consistency. Spread icing on cookies, let dry. If desired, add a drop or two of food coloring, spoon into a zipper style plastic bag, forcing the icing to the corner. Make a small hole in the corner and use to pipe decorations onto cookies.
