GINGERBREAD PEOPLE








3 cups all-purpose flour


¾ tsp. baking soda


½ tsp. ground cinnamon


1/8 tsp. ground cloves


½ cup butter


½ cup granulated sugar


1 large egg


½ cup molasses


1 tsp. vanilla


¼ cup grated fresh ginger


Royal Icing


Assorted colors of paste food coloring








In medium bowl, stir together flour, soda, cinnamon %26amp; cloves. In large owl, beat butter w/electric mixer. Add sugar; beat until fluffy. Add eggs, molasses %26amp; vanilla; beat until combined. Beat in ginger %26amp; as much of the flour mixture as you can w/mixer. Stir in remaining flour w/wooden spoon, or until easy to handle. Cover %26amp; chill dough about 3 hours, or until easy to handle. Preheat oven to 375 degrees F. On lightly-floured surface, roll dough to about 1/8” thick. Cut dough using 5” gingerbread people cookie cutters. Place cutouts about 1” apart on lightly-greased cookie sheet. Bake for 5 to 6 minutes , or until edges are firm %26amp; bottoms are light brown. Transfer cookies to wire rack %26amp; cool completely. Pipe designs on cookies w/tinted Royal Icing. To store, place in layers, separated by waxed paper, in airtight container. Store piped cookies for up to 3 days at room temperature. Freeze unfrosted cookies for up to 3 months.. Thaw, and if desired, pipe w/icing.

ROYAL ICING








2 cups sifted powdered sugar


4 tsp. meringue powder


¼ tsp. cream of tartar


¼ cup warm water


1 to 2 tablespoons additional warm water


Paste food coloring





In small bowl, combine sugar, meringue powder %26amp; cream of tartar. Stir in warm water. Beat on low speed until combined, then on high speed for 7 to 10 minutes until very stiff. Add 1 to 2 tablespoons additional warm water, 1 teaspoon at a time, until of glazing consistency. To tint, divide the glaze into small portions. Add enough paste food coloring to each portion to make desired color. Pipe onto cookies.Whats an easy gingerbread man cookie recipe.?

OLD FASHIONED GINGERBREAD COOKIES





1/4 c. hot water


4 1/2 c. sifted plain flour


2 tsp. ginger


2 tsp. cinnamon


1/2 tsp. salt


1 c. shortening (vegetable oil, butter or mixed)


1 c. brown sugar, packed


1 egg


1 c. unsulfured molasses


3/4 c. cold black coffee





Dissolve soda in hot water and set aside to cool. Mix and sift together the flour, spices and salt. Cream shortening and sugar until fluffy. Stir in unbeaten egg. Mix well. Add molasses. Mix well. Add sifted dry ingredients alternately with coffee, beating well after each addition. Stir in soda and water mixture. Drop by teaspoonful on cookie sheet and bake at 425 degrees or chill thoroughly, roll out and cut gingerbread men or any cookie shape that you prefer.





GINGERBREAD COOKIES





1 c. molasses


1 c. sugar


1 c. melted butter


1 egg


1 c. milk


2 tsp. baking soda


1 tsp. salt


1/2 tsp. cinnamon


1/2 tsp. cloves


1/2 tsp. nutmeg


5-6 c. flour





Add following ingredients in order given - molasses, sugar, shortening, egg and milk. Sift soda, salt, cinnamon, cloves, and nutmeg in 1 cup flour, and add to other mixture. Add 4 more cups flour, and mix well. Turn onto floured board and roll quite thick.


(If dough is sticky, add flour until it is not). Cut out with any cookie cutter - makes a great gingerbread man. Bake on greased cookie sheets 10-12 minutes at 325 degrees until lightly golden brown.





If making gingerbread men, use raisins for eyes, and nose, and buttons.

3. 1 (3.9 ounce) package JELL-O Butterscotch Flavor Instant Pudding and Pie Filling


4. 1 egg


5. 2 cups flour


6. 1 teaspoon baking soda


7. 1 tablespoon ground ginger


8. 1 1/2 teaspoons ground cinnamon

2. Cooking Directions





1. Beat butter, sugar, dry pudding mix and egg in large bowl with electric mixer on medium speed until well blended. Combine remaining ingredients. Gradually add to pudding mixture, beating well after each addition; cover. Refrigerate 1 hour or until dough is firm..


2. Preheat oven to 350 degrees F. Roll out dough on lightly floured surface to 1/4-inch-thickness. Cut into gingerbread shapes with 4-inch cookie cutter. Place on greased baking sheets. Use a straw to make a hole near the top of each cookie to use for hanging.


3. Bake 10 to 12 min. or until edges are lightly browned. Remove from baking sheets. Cool on wire racks. Decorate as desired





Yield: 20 servings
The easiest way is to go to the supermarket and get a box or package that you just mix eggs and oil. We're making so many cookies here that I wanted to make something easy and this was definitely the easiest way and then we just cut them out with gingerbread man cookie cutters. Merry Christmas!
Because molasses isn't something that I usually keep around the house, I started using a gingerbread mix to make my cookies. Pillsbury makes an excellent mix. You can use it to make gingerbread cookies or cakes. Instructions for both are printed on the box.
