Magic Cookie Bars


Servings: Makes 2 to 3 dozen bars








Prep Time: 10 minutes


Cook Time: 25 minutes


Total Time: 35 minutes








Ingredients


1 1/2 cups graham cracker crumbs


1/2 cup (1 stick) butter or margarine, melted


1 (14-ounce) can EAGLE BRAND Sweetened Condensed Milk (NOT evaporated milk)


2 cups (12 ounces) semi-sweet chocolate chips


1 1/3 cups flaked coconut


1 cup chopped nuts





Instructions


Preheat oven to 350掳F (325掳F for glass dish). In small bowl, combine graham cracker crumbs and butter; mix well. Press crumb mixture firmly on bottom of 13X9-inch baking pan.


Pour EAGLE BRAND庐 evenly over crumb mixture. Layer evenly with remaining ingredients; press down firmly with fork.


Bake 25 minutes or until lightly browned. Cool. Cut into bars or diamonds. Store leftovers covered at room temperature.








Notes: Recipe Variations: Substitute chocolate chips or nuts with: candy coated pieces, dried cranberries, raisins, mini marshmallows or butterscotch chips.
Butter and Jam Thumbprints





1 3/4 cups all-purpose flour


1/2 teaspoon baking powder


1/2 teaspoon fine salt


3/4 cup unsalted butter (1 1/2 sticks), softened


2/3 cup sugar, plus more for rolling


1 large egg


1/2 vanilla bean, seeds scraped from pod, or 1/8 teaspoon vanilla bean paste or 1 teaspoon pure vanilla extract


1/3 cup raspberry, cherry or strawberry jam





Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone mats.


Whisk the flour, baking powder and salt together in a bowl.





In another bowl, whip the butter and the sugar with a hand-held mixer until fluffy, about 5 minutes. Beat in the egg and vanilla until just combined. Slowly beat in the dry ingredients in 2 additions, mixing just until incorporated.





Scoop the dough into 1-inch balls with a cookie or ice cream scoop and roll in sugar. Place about 2-inches apart on the prepared baking sheets. Press a thumbprint into the center of each ball, about 1/2-inch deep. Fill each indentation with about 3/4 teaspoon jam.





Bake cookies until the edges are golden, about 15 minutes. (For even color, rotate the pans from top to bottom about halfway through baking.) Cool cookies on the baking sheets. Serve.





Store cookies in a tightly sealed container for up to 5 days.

CHRISTMAS SUGAR COOKIES





1/2 c. butter-flavored Crisco


1 egg


1 c. sugar


2 c. flour


1/4 tsp. vanilla


1/4 c. milk


2 tsp. baking powder





Cream butter and sugar. Add beaten egg and milk. Sift flour and baking powder together, adding half of it at a time to the above mixture. Add vanilla. Roll out 1/4 inch thick on a floured board. Cut into Christmas shapes and sprinkle with sugar. Place on an ungreased cookie sheet and bake in a preheated 400 degree oven for 10 to 12 minutes.

Vanilla Butter Cookies


Ingredients:


8 ounces unsalted butter


1 cup sugar


4 large egg yolks, beaten


2 tablespoons pure vanilla extract


2-1/4 cups unbleached flour


3/4 teaspoon baking powder


Pinch of salt





Preparation:





In a large bowl, cream the butter with the sugar until light and fluffy. Add the beaten yolks and vanilla and beat thoroughly.





Sift flour, baking powder and salt together. Gradually add the dry ingredients to the butter mixture, blending well after each addition.





Form the dough into a ball, wrap in wax paper and refrigerate overnight,or place in freezer for about 30 minutes.


Use non-stick pans or line pans with parchment paper. Spray lightly with baking oil. Preheat oven to 350 degrees.





Place dough between 2 pieces of wax paper and roll to a thickness of slightly less than 1/4 inch. Using a cutter, or inverted glass, cut cookies and transfer to baking sheets.





Bake for about 12 minutes or until cookies begin to brown. Place pans on cooling racks for about 5 minutes, then carefully remove cookies. Allow cookies to cool thoroughly before serving.

Cut dough into 1/8-inch-thick slices and arrange slices about 1/2 inch apart on baking sheet. Bake cookies in batches in middle of oven until golden around edges, 10 to 12 minutes, and transfer with a metal spatula to a rack to cool. Cookies may be kept in an airtight container at room temperature 5 days.





Makes about 100 cookies.

Cut each log into 1/2-inch-thick slices; place on lightly greased baking sheets. Press thumb in center of each slice to make an indentation; fill with 1/2 teaspoon preserves.





Bake at 350掳 for 10 minutes or until edges are lightly browned. Remove to wire racks to cool. Freeze, if desired.





Yield: Makes 6 dozen

    In large bowl of stand mixer combine the egg whites and vanilla and beat until frothy. Add confectioners' sugar gradually and mix on low speed until sugar is incorporated and mixture is shiny. Turn speed up to high and beat until mixture forms stiff, glossy peaks. This should take approximately 5 to 7 minutes. Add food coloring, if desired.
    With a fork, mash together 1 tablespoon butter and 1 tablespoon powdered sugar until a fine paste. Add a few drops of milk. Continue adding powdered sugar and milk until desired consistency is achieved. You want it to be the consistency of Elmer's Glue. Add 2 drops of almond or vanilla extract. Stir more.





    Yield: about 1 cup.

    2 packets regular instant oatmeal


    2 cups all-purpose flour


    1/2 cup granulated sugar


    pinch dried rosemary, optional


    1 large apple, grated


    2 med carrots, grated


    1/2 cup raisins, chopped


    1 egg


    1/2 cup canola oil


    1/2 cup honey, molasses or maple syrup


    1/3 cup water





    Preheat oven to 350F. In large bowl, mix dry ingredients, apple, carrots and raisins. In a medium bowl, egg with liquid ingredients. Add dry ingredients to liquid ingredients. Stir until completely mixed. Using a tablespoon, drop small mounds of the mixture onto an ungreased cookie sheet. Bake until crisp on the outside, 15-20 minutes. Cool. Store in a tightly sealed container. Makes 36 cookies.

    1 cup molasses





    Mix oats, grain and bran together in a bucket. Drizzle in molasses while mixing with your hands. Place handfulls on a cookie sheet and bake at 375潞 for 8 minutes.





    Or try:





    1 cup of horse oats or uncooked oatmeal


    1 cup flour


    1 cup of shredded carrot


    1 teaspoon salt


    1 1/2 tablespoons sugar


    2 tablespoons vegetable oil


    1/4 cup water


    1/4 cup molasses (or mix two teaspoons of sugar to every five teaspoons of pancake syrup and stir in)





    Mix all ingredients in bowl in order listed. Make small or medium size balls out of mixture and place on a greased cookie sheet sprayed with Pam. For extra happy horses you can sprinkle a little bit of honey on them before cooking.


    Bake 350掳F for 15-20 minutes and make sure they don't burn!

    1/2 cup packed light brown sugar


    1 cup all-purpose flour


    1/4 teaspoon baking soda


    1/8 teaspoon salt


    1 cup rolled oats


    1/2 cup butter, softened


    3/4 cup seedless raspberry jam








    DIRECTIONS


    Preheat oven to 350 degrees F (175 degrees C). Grease one 8 inch square pan, and line with greased foil.


    Combine brown sugar, flour, baking soda, salt, and rolled oats. Rub in the butter using your hands or a pastry blender to form a crumbly mixture. Press 2 cups of the mixture into the bottom of the prepared pan. Spread the jam to within 1/4 inch of the edge. Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam.


    Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.

    3/4 c Butter (soft)


    1 lb Brown sugar


    3 ea Eggs


    4 c Bisquick


    1 c Chopped nuts


    12 oz Chocolate chips





    Heat oven to 375 degrees.





    Mix well butter, brown sugar and eggs; stir in bisquick, nuts and chocolate chips.





    Drop with teaspoon 2 inches apart on ungreased cookie sheet.





    Bake about 10 minutes until light brown.





    Recipe yields about 4 dozen cookies.





    and heres another one you could crunch up a heath bar or omit the butterscotch bits entirely.

    1 3/4 c. Bisquick


    3/4 c. light brown sugar

    Put Bisquick, sugar, butterscotch bits and dates into bowl. To the beaten egg, add shortening, milk and vanilla. Add to the dry ingredients. Mix well. Bake 10 to 12 minutes in 375 degree oven. Raisins, nuts or other things may be used in place of butterscotch bits and dates.

    Method


    1. Oil a baking sheet. Preheat the oven to 180C/350F/Gas mark 4.


    2. Place the flour, oil, bouillon powder and soya milk in a bowl, mix together to form a dough, then divide into three equal pieces. On a floured work surface, roll out the dough into rectangles measuring 15x10cm/6x4in.


    3. Spread the tapenade and chopped mushrooms on one rectangle; the red pesto and chopped red peppers and chillies on another; and the cream cheese, spring onions and herbs on the third.


    4. Roll each sheet up from a short end and cut each roll into six pieces. Place the savoury swirls on the prepared baking sheet, brush the tops with oil and bake for 25 minutes.


    5. Serve the swirls hot with soup or cold with a selection of dips.

    1 Cup Peanut Butter


    1 Cup White Sugar


    1 Large Egg


    1/4 tsp. vanilla





    Preheat oven to 350 degrees.

    Directions:


    PREHEAT oven to 325掳 F. Grease large baking sheet.

    PLACE whole bar of dough in prepared pan. Allow to soften for 5 to 10 minutes. Using fingertips, pat dough gently to form tree shape.

    4 cups of flour


    1 lb of butter (I believe that's 4 sticks,,, about 2 cups)


    1 cup of superfine sugar (I've never tried it with regular but I doubt it would make much difference)





    Cream the butter and sugar together. Add in the flour and knead


    Roll out to about 1/6 inch and bake at 300 degrees for about 30 mins (The recipe calls for 30 mins but I personally like them a little raw... about 20-25 mins)...





    When your done you can ice them, just mix icing sugar with water and add a little almond extract... you can ice them with your fingers and add sprinkles or candies,,, you can add food coloring if you want.. Experiment with the consistency.. It should be a little watery.. If it starts to dry out, just add more water, or more icing sugar.





    And you can eat the dough raw (which is really tasty) because it doesn't contain eggs! The icing really makes the shortbread :)
    Alton Brown has an easy refrigerator cookie dough that makes great sugar/shortbread cookies that the kids can ice or decorate with colored sugar and candies. It takes about ten minutes to mix up and then you refrigerate for about a two hours and then you can roll and cut.

    SLICE AND BAKE COOKIE VARIATION:


    PREPARE dough as above. Divide in half; wrap in waxed paper. Refrigerate for 1 hour or until firm. Shape each half into 15-inch log; wrap in wax paper. Refrigerate for 30 minutes.* Preheat oven to 375° F. Cut into 1/2-inch-thick slices; place on ungreased baking sheets. Bake for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Makes about 5 dozen cookies.

    FOR HIGH ALTITUDE BAKING (5,200 feet): Increase flour to 2 1/2 cups. Add 2 teaspoons water with flour and reduce both granulated sugar and brown sugar to 2/3 cup each. Bake drop cookies for 8 to 10 minutes and pan cookie for 17 to 19 minutes. hope i helped! (:

    2 packets regular instant oatmeal


    2 cups all-purpose flour


    1/2 cup granulated sugar


    pinch dried rosemary, optional


    1 large apple, grated


    2 med carrots, grated


    1/2 cup raisins, chopped


    1 egg


    1/2 cup canola oil


    1/2 cup honey, molasses or maple syrup


    1/3 cup water





    Preheat oven to 350F. In large bowl, mix dry ingredients, apple, carrots and raisins. In a medium bowl, egg with liquid ingredients. Add dry ingredients to liquid ingredients. Stir until completely mixed. Using a tablespoon, drop small mounds of the mixture onto an ungreased cookie sheet. Bake until crisp on the outside, 15-20 minutes. Cool. Store in a tightly sealed container. Makes 36 cookies.

    2 cups dry oatmeal


    3/4 cup grain


    3 cups bran


    1 cup molasses





    Mix oats, grain and bran together in a bucket. Drizzle in molasses while mixing with your hands. Place handfulls on a cookie sheet and bake at 375潞 for 8 minutes.





    Or try:





    1 cup of horse oats or uncooked oatmeal


    1 cup flour


    1 cup of shredded carrot


    1 teaspoon salt


    1 1/2 tablespoons sugar


    2 tablespoons vegetable oil


    1/4 cup water


    1/4 cup molasses (or mix two teaspoons of sugar to every five teaspoons of pancake syrup and stir in)

    Ingredients:

    Delicious spiced apple cookies with chopped nuts and raisins, along with a vanilla glaze.


    INGREDIENTS:








    2 cups all-purpose flour, stirred before measuring


    1 teaspoon baking soda


    1/2 teaspoon salt





    1 teaspoon ground cinnamon











    1/2 teaspoon ground nutmeg








    1/2 cup shortening


    1 1/4 cups brown sugar, firmly packed


    1 egg


    1 cup chopped walnuts or pecans


    1 cup finely chopped unpeeled apple


    1 cup raisins, chopped


    1/4 cup milk or juice











    Vanilla Glaze, below


    PREPARATION:


    Sift flour with baking soda, salt, cinnamon, and nutmeg. In a large mixing bowl, cream shortening and brown sugar; beat in egg until well-blended. Stir in half of flour and spice mixture, then stir in walnuts, apple, and raisins. Blend in milk, then remaining flour mixture.


    Drop by rounded tablespoons of dough, about 2 inches apart, onto greased baking sheets. Bake at 375掳 for 12 to 15 minutes, or until done. While cookies are still hot, spread thinly with Vanilla Glaze, below. Makes about 3 dozen apple cookies.


    Vanilla Glaze: In a small mixing bowl blend 1 1/2 cups sifted confectioners' sugar with 1 tablespoon softened butter, 1/4 teaspoon vanilla, a dash of salt, and 2 to 3 tablespoons of half-and-half or milk

    This little Mexican wife got up and showed us how to make Flan. She had us use what she always used in her home - very simple.





    FLAN





    1 can evaporated milk


    1 can sweetened condensed milk


    1 egg


    1 tsp vanilla


    nutmeg





    Mix together the milks, egg and vanilla. Place in a casserole dish. Sprinkle the nutmeg over the top. Bake in a 375潞 oven for 40-45 minutes or until a knife comes out clean. Cool to room temperature and refrigerate.

    I make these all the time. The cookies will stay soft and chewy after baking. Also, you can change the flavor of the pudding and add chips to make different cookies. You can use butterscotch pudding and 1 cup of chocolate chips for a delicious chocolate chip cookie. I like to use chocolate pudding, white chocolate chips, and macadamia nuts for a change. Also, you can substitute the chips and walnuts with 1 cup of raisins and 1 cup of oatmeal and use butterscotch pudding for a great oatmeal raisin cookie. But, I have to say my favorite is to use chocolate pudding and the new little tiny Reeses cups!
    1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened


    3/4 cup (1-1/2 sticks) butter, softened


    1 cup granulated sugar


    2 tsp. vanilla


    2-1/4 cups flour


    1/2 tsp. baking soda


    4 rolls ring-shaped hard candies, crushed











    PREHEAT oven to 350掳F. Beat cream cheese, butter, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add flour and baking soda; mix well. Cover. Refrigerate 30 min.


    ROLL dough to 1/8-inch thickness on lightly floured surface. Cut into assorted shapes using 3-inch cookie cutters. Place on greased baking sheets.

    1 cup all-purpose flour


    1/4 teaspoon baking soda


    1/8 teaspoon salt


    4 tablespoons margarine, softened


    2/3 cup packed brown sugar

    1 large egg white


    Cooking spray





    Combine first 3 ingredients in a bowl, and set aside. Beat margarine at medium speed of a mixer until light and fluffy. Gradually add sugar, beating at medium speed of a mixer until well-blended. Add vanilla and egg white, and beat well. Add flour mixture, and stir until well-blended. Turn dough out onto wax paper; shape into a 6-inch log. Wrap log in wax paper; freeze 3 hours or until very firm.


    Preheat oven to 350掳.





    Cut log into 24 (1/4-inch) slices, and place slices 1 inch apart on a baking sheet coated with cooking spray. Bake at 350掳 for 8 to 10 minutes. Remove from pan; cool on wire racks.

    1 cup sugar


    2 cups flour


    1 beaten egg

    Beat sugar and butter till fluffy. Add beaten egg and vanilla. Mix dry ingredients together and add to the sugar and butter mixture.


    Roll dough into walnut-size balls; place on greased cookie sheet


    and press out the balls with the bottom of a glass dipped first in


    water, then in sugar. Bake in 350 degree oven for 10 - 12 minutes. (Makes about 4 dozen cookies.)

    PEANUT BUTTER HERSHEY KISS COOKIES





    2 cups sugar


    2 cups peanut butter


    2 eggs


    2 teaspoons of baking soda


    Bag of hershey's kisses (unwraped)





    Preheat oven to 350 degrees. Mix the sugar and peanut butter together in a bowl. Then add the eggs and baking soda. Mix well.


    Roll dough into one inch balls and place on a greased cookie sheet about 1-2 inches apart. Sprinkle with some sugar. Place them in the oven for 9 minutes and what ever you do- DO NOT let them over bake. When they are done baking, take them out and firmly press a hershey's kiss in the center of each one and then let them cool.





    My family goes crazy over these cookies, and the best part is they are so simple to make. Good luck!
    My Sugar Cookies





    3 1/4 cups flour


    2 tsp baking powder


    1/2 tsp salt


    3/4 cup softened butter


    1 1/2 cups sugar


    2 eggs


    1 tbsp mik


    1 1/2 tsp vanilla extract


    Sprinkles and *Frosting (recipe follows)





    Mix 1st 3 ingredients and set aside.


    Beat butter until creamy. Add sugar. Add eggs one at a time, mixing well after each. Pour in flour mix gradually and blend until creamy. Refrigerate at least 2 1/2 hours covered. Preheat oven to 400 degrees F. Roll dough out into a floured surface. Cut into desired shaped with cookie cutters. Cook 7 minutes on a greased cookie sheet. Remove and transfer to a wire cooling rack. Roll out wax paper on counter top. Place cookies on paper and frost if desired. Top with sprinkles.





    *Frosting:1/2 cup butter at room temperature


    3 cups Powdered Sugar


    1/4 cup milk


    1 teas vanilla ( I use about 2 tsp)





    Cream butter. Add sugar, milk, and vanilla. Mix until light and fluffy. May need to be refrigerated.


    (This makes A LOT of frosting, so I suggest making 1/2 the recipe)

    Preheat oven to 350. IN a medium bowl, cream butter adn 1 cup sugar. Beat in egg and molasses. Add in flour, ginger, cinnamon, baking soda, and salt. Roll dough into 1 inch balls adn roll in 1/2 cup sugar. Bake 8 minutes.








    Mini Chocolate Marylands





    1/2 cup butter, diced at room temp


    1/2 cup superfine sugar


    1 egg


    1 egg yolk


    1 tsp vanilla


    1 1/2 cups self rising flour


    1/2 cup milk


    1/2 cup chocolate chips





    Preheat oven to 350. Grease 2 cookie sheets, Beat butter and sugar until creamy. Add egg, yolk, vanilla, flour, milk adn 1/2 the chocolate chips. Stir until combined. Place small mounds on baking sheet, spaced. Press remaining chips on mound's tops. Bake 10-15 minutes. Leave on sheet for 2 minutes to firm up. Transfer to wire rack to cool.
    Pilsbury sugar cookies, put sprinkle and frosting! U just stick in the oven!!
    All these recipes are my family's favorites. My mother used to make the jam bars when I was a kid...so needless to say the recipe is close to 50 years old. The oatmeal recipe, over 30---I learned it in home-ed class in junior-high school. The other 2 recipes well over 25 years...(gee, am I old or what?)





    JAM BARS:


    1 1/2 cups sifted flour


    1/2 teaspoon baking powder


    1/2 cup butter


    1/2 cup sugar


    1/2 teaspoon almond extract


    1 egg


    3/4 cup jam or preserves


    1/2 teaspoon cinnamon


    1/4 teaspoon ground cloves


    Sift together flour and baking powder in a small bowl and set aside. In a large bowl cream butter, sugar and almond extract. Beat in egg thoroughly. Add sifted dry ingredients to butter mixture and stir to blend.


    Spread a little less than half the dough into a greased baking pan (about 11 x 7 x 2 in.)


    In a small bowl, mix jam with cinnamon and ground cloves. Spread over dough. Drop remaining dough in blobs over jam; spread carefully with small spatula. Bake in hot oven at 400 degrees for about 20 minutes. Put on rack to cool; cut into squares.


    ( I either use orange marmalade or grape jelly)





    PRIDE OF IOWA COOKIES:


    1 cup shortening


    1 cup brown sugar, packed


    1 cup granulated sugar


    2 eggs, beaten


    1 teaspoon vanilla extract


    2 cups flour, sifted


    1 teaspoon baking soda


    1 teaspoon baking powder


    1/4 teaspoon salt


    1 cup flaked coconut


    1/2 cup chopped walnuts


    3 cups rolled oats, quick-cooking


    Cream together; shortening and both sugars.


    Beat in eggs and vanilla.


    Sift flour, baking soda, baking powder and salt and add to egg mixture.


    Blend well. Stir in coconut, walnuts and rolled oats. Drop by teaspoonfuls onto greased cookie sheet. Bake at 375 degrees for 8 to 10 minutes. Cool on wire racks.





    GOODIE BARS


    1/4 stick butter - melted


    1 cup graham cracker crumbs


    1 cup shredded coconut


    1 cup chocolate chips


    1 cup chopped walnuts


    1 can condensed milk


    Melt butter and mix with graham cracker crumbs; press into ungreased 9 x 13 inch baking pan. Spread coconut , then chips, then walnuts. Pour condensed milk on top and bake at 350 for 30 minutes. Cool and cut into squares.





    KRISPY's CARROT COOKIES:


    1 cup shortening (part soft butter)


    3/4 cup sugar


    2 eggs


    1 cup mashed cooked carrots


    2 cups flour


    2 Tablespoon baking powder


    1/4 teaspoon salt


    3/4 cup shredded coconut


    Mix shortening, sugar, eggs and carrots. Blend in flour, baking powder and salt. Stir in coconut. Drop dough by teaspoons; 2 inches apart onto lightly greased baking sheet. (I use parchment paper instead) Bake @ 375 degrees for 8 to 10 minutes or until no imprint remains when touched. Remove from baking sheet and cool on wire racks. Frost with Orange Frosting.





    ORANGE FROSTING:


    3 Tablespoons soft butter or margarine


    1 1/2 cups confectioners sugar


    2 Tablespoons grated orange peel


    up to 1 Tablespon orange juice


    Blend butter and sugar together. Stir in orange peel and juice. Beat until frosting is smooth and of spreading consistency.


    (I usually double the frosting recipe per batch of cookies)

    Really easy and yummy- no need to refrigerate or deal with cookie cutters. The recipe calls for buttermilk, but many people have said that other milks work just as well.


    You can also roll the cookies in the sugar sprinkles before baking.








    2 3/4 cups all-purpose flour


    1 teaspoon baking soda


    1/2 teaspoon baking powder


    1 cup softened butter


    1 1/2 cups white sugar


    1 egg


    1 teaspoon vanilla extract


    3 to 4 tablespoons buttermilk


    Sprinkles or colored sugar, for decorating





    Preheat oven to 375 degrees F.


    In a small bowl, stir together flour, baking soda, and baking powder. Set aside.





    In a large bowl, cream together butter and sugar until smooth. Beat in the egg and vanilla. Gradually blend in dry ingredients. Add enough of the buttermilk to moisten the dough and make it soft, not wet.





    Roll rounded teaspoons of dough into balls and place on a ungreased cookie sheet. With a brush or fingers, moisten the top of each cookie with the remaining buttermilk and slightly flatten the top of each cookie. Sprinkle with raw sugar or colored sprinkles.





    Bake for 8 to 10 minutes or until slightly golden. Let stand for 2 minutes before removing to cool on a rack.

    Buy a yellow cake mix, add 3 eggs and a half a cup of oil, a little milk if you need to soften the dough-- roll into balls and roll in sugar. Put on cookie sheet and bake at 350 degrees until done. If you want chocolate cookies use a chocolate or devil's food cake mix. Cheap moist cookies fast!!!     INGREDIENTS:

    DIRECTIONS:


    1.Preheat oven to 375 degrees F (190 degrees C).


    2.Combine the flour and baking soda. Set aside.


    3.Mix the butter, brown sugar, white sugar, pudding mix, and vanilla. Beat until creamy. Add the eggs and mix well. Gradually stir in the flour mixture. Drop from teaspoon onto ungreased cookie sheets about 1 inch apart. or roll out (using flour to coat surface and rolling pin). Cut into desired shape.


    4.Bake at 375 degrees F (190 degrees C) for 8 to 10 minutes.


    I make these all the time. The cookies will stay soft and chewy after baking. Also, you can change the flavor of the pudding and add chips to make different cookies. You can use butterscotch pudding and 1 cup of chocolate chips for a delicious chocolate chip cookie. I like to use chocolate pudding, white chocolate chips, and macadamia nuts for a change. Also, you can substitute the chips and walnuts with 1 cup of raisins and 1 cup of oatmeal and use butterscotch pudding for a great oatmeal raisin cookie. But, I have to say my favorite is to use chocolate pudding and the new little tiny Reeses cups!
    1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened


    3/4 cup (1-1/2 sticks) butter, softened


    1 cup granulated sugar


    2 tsp. vanilla


    2-1/4 cups flour


    1/2 tsp. baking soda


    4 rolls ring-shaped hard candies, crushed











    PREHEAT oven to 350掳F. Beat cream cheese, butter, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add flour and baking soda; mix well. Cover. Refrigerate 30 min.


    ROLL dough to 1/8-inch thickness on lightly floured surface. Cut into assorted shapes using 3-inch cookie cutters. Place on greased baking sheets.


    BAKE 10 to 12 min. or until edges begin to brown. Transfer cookies to rack; immediately press about 1/2 tsp. crushed candies onto each hot cookie. Cool completely on wire racks.


    Takes about 55 min. total
    Brown Sugar Icebox Cookies








    1 cup all-purpose flour


    1/4 teaspoon baking soda


    1/8 teaspoon salt


    4 tablespoons margarine, softened


    2/3 cup packed brown sugar


    1 teaspoon vanilla extract


    1 large egg white


    Cooking spray





    Combine first 3 ingredients in a bowl, and set aside. Beat margarine at medium speed of a mixer until light and fluffy. Gradually add sugar, beating at medium speed of a mixer until well-blended. Add vanilla and egg white, and beat well. Add flour mixture, and stir until well-blended. Turn dough out onto wax paper; shape into a 6-inch log. Wrap log in wax paper; freeze 3 hours or until very firm.


    Preheat oven to 350掳.





    Cut log into 24 (1/4-inch) slices, and place slices 1 inch apart on a baking sheet coated with cooking spray. Bake at 350掳 for 8 to 10 minutes. Remove from pan; cool on wire racks.





    Yield: 2 dozen (serving size: 1 cookie)

    Preheat oven to 375掳 F





    In small bowl, combine flour, baking soda, and baking powder. Set aside.





    In big bowl, beat butter and sugar until creamy. Beat in egg and vanilla. Gradually beat in flour mix. Add in candy pieces if you want.





    Shape dough into teaspoonful-sized balls. Place on ungreased cookie sheets.





    Bake 8-10 minutes or until golden. Let stand on cookie sheet two minutes. Remove and let cool.

    Sugar cookies:





    1 1/2 cups sifted confectioners' sugar


    1 cup butter


    1 egg


    1 tea vanilla


    1/2 tea almond flavoring


    2 1/2 cups flour

    Cream sugar and butter. Mix in egg and flavorings. Mix dry ingredients, stir in. Refrigerate 2 to 3 hours.





    Heat over to 375F. Divide dough in half and roll out on lightly floured pastry cloth to 3/16'; thick.





    Cut in desired shapes. Sprinkle with sugar. Place on lightly greased baking sheet. Bake 7 to 8 minutes or until delicately golden.





    Makes about 5 dozen 2'; cookies, I believe. I usually double the recipe so there are plenty of cookies.

    ANDY'S SUGAR COOKIES


    1 cup sugar


    2 cups flour


    1 beaten egg


    1 cup softened butter


    1/2 tsp. vanilla extract


    1/2 tsp. baking soda


    1/4 tsp. cream of tartar





    Beat sugar and butter till fluffy. Add beaten egg and vanilla. Mix dry ingredients together and add to the sugar and butter mixture.


    Roll dough into walnut-size balls; place on greased cookie sheet


    and press out the balls with the bottom of a glass dipped first in


    water, then in sugar. Bake in 350 degree oven for 10 - 12 minutes. (Makes about 4 dozen cookies.)
    Here is a very easy recipie that yields delicious cookies.





    PEANUT BUTTER HERSHEY KISS COOKIES





    2 cups sugar


    2 cups peanut butter


    2 eggs


    2 teaspoons of baking soda


    Bag of hershey's kisses (unwraped)





    Preheat oven to 350 degrees. Mix the sugar and peanut butter together in a bowl. Then add the eggs and baking soda. Mix well.


    Roll dough into one inch balls and place on a greased cookie sheet about 1-2 inches apart. Sprinkle with some sugar. Place them in the oven for 9 minutes and what ever you do- DO NOT let them over bake. When they are done baking, take them out and firmly press a hershey's kiss in the center of each one and then let them cool.





    My family goes crazy over these cookies, and the best part is they are so simple to make. Good luck!
    My Sugar Cookies





    3 1/4 cups flour


    2 tsp baking powder


    1/2 tsp salt


    3/4 cup softened butter


    1 1/2 cups sugar


    2 eggs


    1 tbsp mik


    1 1/2 tsp vanilla extract


    Sprinkles and *Frosting (recipe follows)





    Mix 1st 3 ingredients and set aside.


    Beat butter until creamy. Add sugar. Add eggs one at a time, mixing well after each. Pour in flour mix gradually and blend until creamy. Refrigerate at least 2 1/2 hours covered. Preheat oven to 400 degrees F. Roll dough out into a floured surface. Cut into desired shaped with cookie cutters. Cook 7 minutes on a greased cookie sheet. Remove and transfer to a wire cooling rack. Roll out wax paper on counter top. Place cookies on paper and frost if desired. Top with sprinkles.





    *Frosting:1/2 cup butter at room temperature


    3 cups Powdered Sugar


    1/4 cup milk


    1 teas vanilla ( I use about 2 tsp)





    Cream butter. Add sugar, milk, and vanilla. Mix until light and fluffy. May need to be refrigerated.


    (This makes A LOT of frosting, so I suggest making 1/2 the recipe)








    Gingersnaps





    3/4 cup butter


    1 cup sugar


    1 egg


    1/4 cup molasses


    2 cups flour


    1 tbs ground ginger


    1 teas cinnamon


    2 teas baking soda


    1/2 teas salt


    1/2 cup sugar





    Preheat oven to 350. IN a medium bowl, cream butter adn 1 cup sugar. Beat in egg and molasses. Add in flour, ginger, cinnamon, baking soda, and salt. Roll dough into 1 inch balls adn roll in 1/2 cup sugar. Bake 8 minutes.








    Mini Chocolate Marylands





    1/2 cup butter, diced at room temp


    1/2 cup superfine sugar


    1 egg


    1 egg yolk


    1 tsp vanilla


    1 1/2 cups self rising flour


    1/2 cup milk


    1/2 cup chocolate chips





    Preheat oven to 350. Grease 2 cookie sheets, Beat butter and sugar until creamy. Add egg, yolk, vanilla, flour, milk adn 1/2 the chocolate chips. Stir until combined. Place small mounds on baking sheet, spaced. Press remaining chips on mound's tops. Bake 10-15 minutes. Leave on sheet for 2 minutes to firm up. Transfer to wire rack to cool.
    Pilsbury sugar cookies, put sprinkle and frosting! U just stick in the oven!!
    All these recipes are my family's favorites. My mother used to make the jam bars when I was a kid...so needless to say the recipe is close to 50 years old. The oatmeal recipe, over 30---I learned it in home-ed class in junior-high school. The other 2 recipes well over 25 years...(gee, am I old or what?)





    JAM BARS:


    1 1/2 cups sifted flour


    1/2 teaspoon baking powder


    1/2 cup butter


    1/2 cup sugar


    1/2 teaspoon almond extract


    1 egg


    3/4 cup jam or preserves


    1/2 teaspoon cinnamon


    1/4 teaspoon ground cloves


    Sift together flour and baking powder in a small bowl and set aside. In a large bowl cream butter, sugar and almond extract. Beat in egg thoroughly. Add sifted dry ingredients to butter mixture and stir to blend.


    Spread a little less than half the dough into a greased baking pan (about 11 x 7 x 2 in.)


    In a small bowl, mix jam with cinnamon and ground cloves. Spread over dough. Drop remaining dough in blobs over jam; spread carefully with small spatula. Bake in hot oven at 400 degrees for about 20 minutes. Put on rack to cool; cut into squares.


    ( I either use orange marmalade or grape jelly)





    PRIDE OF IOWA COOKIES:


    1 cup shortening


    1 cup brown sugar, packed


    1 cup granulated sugar


    2 eggs, beaten


    1 teaspoon vanilla extract


    2 cups flour, sifted


    1 teaspoon baking soda


    1 teaspoon baking powder


    1/4 teaspoon salt


    1 cup flaked coconut


    1/2 cup chopped walnuts


    3 cups rolled oats, quick-cooking


    Cream together; shortening and both sugars.


    Beat in eggs and vanilla.


    Sift flour, baking soda, baking powder and salt and add to egg mixture.


    Blend well. Stir in coconut, walnuts and rolled oats. Drop by teaspoonfuls onto greased cookie sheet. Bake at 375 degrees for 8 to 10 minutes. Cool on wire racks.





    GOODIE BARS


    1/4 stick butter - melted


    1 cup graham cracker crumbs


    1 cup shredded coconut


    1 cup chocolate chips


    1 cup chopped walnuts


    1 can condensed milk


    Melt butter and mix with graham cracker crumbs; press into ungreased 9 x 13 inch baking pan. Spread coconut , then chips, then walnuts. Pour condensed milk on top and bake at 350 for 30 minutes. Cool and cut into squares.





    KRISPY's CARROT COOKIES:


    1 cup shortening (part soft butter)


    3/4 cup sugar


    2 eggs


    1 cup mashed cooked carrots


    2 cups flour


    2 Tablespoon baking powder


    1/4 teaspoon salt


    3/4 cup shredded coconut


    Mix shortening, sugar, eggs and carrots. Blend in flour, baking powder and salt. Stir in coconut. Drop dough by teaspoons; 2 inches apart onto lightly greased baking sheet. (I use parchment paper instead) Bake @ 375 degrees for 8 to 10 minutes or until no imprint remains when touched. Remove from baking sheet and cool on wire racks. Frost with Orange Frosting.





    ORANGE FROSTING:


    3 Tablespoons soft butter or margarine


    1 1/2 cups confectioners sugar


    2 Tablespoons grated orange peel


    up to 1 Tablespon orange juice


    Blend butter and sugar together. Stir in orange peel and juice. Beat until frosting is smooth and of spreading consistency.


    (I usually double the frosting recipe per batch of cookies)
