Honey Gingerbread Men

100g butter (4ozs)

half cup firmly packed raw sugar

1 egg yolk

2 and half cups plain white flour

1 tsp baking soda

1 tbsp ground ginger

3 tbsp Honey

currants for eyes

Cream the butter and sugar until light and fluffy. Beat in the egg yolk well, then slowly add the dry ingredients which have been sifted together.

Soften the honey either by microwaving for 30 seconds on High (100% power) or in a small saucepan using low heat. Add to the other ingredients, mix well then knead lightly. Divide dough into two.

Roll dough out between two sheets of greaseproof paper and using a special gingerbread man cutter, cut out biscuits. Push two currants into the head to represent eyes. Lift onto lightly greased oven trays and bake in a moderate oven (180 C - 350 F) for 10-12 minutes. Cool on traysLooking for an easy cookie recipe. Anything but peanut butter.?
Here is an easy, tasty recipe my family loves=:)

Shortbread Cookie

鈥?3/4 cup butter, softened

鈥?1/4 cup sugar

鈥?2 cups all purpose flour

Preheat oven to 350 degrees. Mix butter and sugar in large bowl. Stir in flour. If dough is crumbly, mix in an additional 1 to 2 tablespoons of softened butter.

Roll dough to 1/2 inch thickness and cut dough with cookie cutters into desired shapes. The dough can even be cut with a knife into wedges or strips for interesting designs. Bake about 20 minutes or until set. Remove from oven and transfer to a wire rack to cool.

I would recommend spreading Jam on top of it, too, for extra taste. Chocolate chips taste good in shortbread, too, if you have any=:)

Happy baking!
Lace Cookies

2 sticks butter

3 cups brown sugar packed

1 egg

录 tsp salt

1 tsp vanilla

4 cups quick rolled oats

陆 c pecans chopped

Blend butter and sugar in mixer. Add egg, salt and vanilla then blend again. Now blend in the rolled oats and chopped pecans. Lightly grease a baking sheet. Using a melon baller, make small balls and drop onto sheet, about two inches apart. Bake at 325% for about 8 minutes.

Note: Cookies will melt, spread out, and become lacy. Let cool completely before removing them, and handle gently.
If you have chocolate chips you can make mint suprises. Little, almost sugarless, cookies with chocolate chips in the middle. I don't know the recipe but you can look up the cookie name online.
