How about a couple of ';fun & easy'; Christmas cookie recipes to make with teenagers? ?

Help! Something not too fussy, yet fun. My BF's daughters will be alone while dad is working. I want to help make the long afternoons go by...

here are a few cookie recipes my kiddos love to help me make at Christmas... since you did not state the age of the girls... i was not sure how easy you needed the recipe to be.....





the first one are thumbprint cookies which they make with their own thumb and then they fill the center with their favorite jam/jelly.... they are good and always a big hit....





Jam filled Thumbprint Cookies


INGREDIENTS.........


1 cup butter, softened


2/3 cup white sugar


1/2 teaspoon almond extract


2 cups all-purpose flour


1/2 cup seedless raspberry jam (or your favorite jam/jelly)


1/2 cup confectioners' sugar


3/4 teaspoon almond extract (not vanilla)


1 teaspoon milk


DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).


In a medium bowl, cream together butter and white sugar until smooth. Mix in 1/2 teaspoon almond extract. Mix in flour until dough comes together. Roll dough into 1 1/2 inch balls, and place on ungreased cookie sheets. Make a small hole in the center of each ball, using your thumb and finger, and fill the hole with preserves.


Bake for 14 to 18 minutes in preheated oven, or until lightly browned. Let cool 1 minute on the cookie sheet.


In a medium bowl, mix together the confectioners' sugar, 3/4 teaspoon almond extract, and milk until smooth. Drizzle lightly over warm cookies.





Christmas Cookie Cut-outs


INGREDIENTS.........


3 3/4 cups all-purpose flour


1 teaspoon baking powder


1/2 teaspoon salt


1 cup margarine, softened


1 1/2 cups white sugar


2 eggs


2 teaspoons vanilla extract


DIRECTIONS


Sift flour, baking powder, and salt together, set aside. In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually blend in the sifted ingredients until fully absorbed. Cover dough, and chill for 2 hours.


Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets. On a clean floured surface, roll out small portions of chilled dough to 1/4 inch thickness. Cut out shapes using cookie cutters.


Bake 6 to 8 minutes in the preheated oven, or until edges are barely brown. Remove from cookie sheets to cool on wire racks.


Decorate as you desire.... it is fun to let the kids use their imagination with these.....





Peppermint Snowballs


INGREDIENTS.............


2 cups butter


1 cup powdered sugar


1 1/2 tsp peppermint extract


3 ½ cups all purpose flour


8 oz white chocolate chips


1 cup sweetened shredded coconut


DIRECTIONS.....


In a large mixing bowl, cream together the butter and powdered sugar. Add in peppermint extract.


Gradually add in flour ½ cup at a time, until full incorporated. Refrigerate for 2-3 hours to firm dough and make it easier to handle.


Preheat oven to 350 degrees F (176 degrees C). Roll out dough into 1” balls. Place onto a baking sheet and bake at 15-20 minutes or until golden brown. Place on a wire rack to cool.


Meanwhile, place white chocolate chips into a microwavable bowl and microwave on high for 30 seconds. Stir and then return to the microwave at 15 second intervals, stirring in between, until melted.


Dip each cooled cookie into the white chocolate to coat, then roll in shredded coconut. Let sit until chocolate has set.





Reindeer Cookies


INGREDIENTS.........


1 roll of pre-made sugar cookie dough


small pretzel rings


M %26amp; Ms


1 bell shaped cookie cutter


flour


baking sheet


DIRECTIONS.........


Preheat oven to 350 degrees F.


Open cookie dough and mix in about 1/4 cup of flour to make the dough a stiffer consistency. Lightly flour the table, then roll the dough out to 1/4 inch thickness.


Using the bell cookie cutter, cut out 12 bell cookies - this will vary depending on how thick you roll out the cookies. Lay the cookies, all the same way with bell facing you, onto the cookie sheet. Now, turn the cookie sheet around so that the bells are upside down. This is your reindeer face!


Place a red M%26amp;M at the bottom of the upsidedown bell for his nose..... and a colored M%26amp;M on each side for each eye....and one pretzel on each side of the top (which is actually the bottom of the bell) of his head for the ears. ......


Bake for 10 minutes or until very lightly browned around edges. Remove from oven and let cool on the baking sheet for 1-2 minutes. Remove to a cooling rack to finish cooling.





No Bake Holly Wreaths


INGREDIENTS.............


1 (16 ounce) package large marshmallows


1/2 cup butter, softened


1 1/2 teaspoons vanilla extract


1 1/2 teaspoons green food coloring


4 1/2 cups cornflakes cereal


1 (2.25 ounce) package cinnamon red hot candies


DIRECTIONS


In a saucepan over low heat, melt together the marshmallows, butter, vanilla, and food coloring. Mix in the cornflakes cereal.


Drop by spoonfuls on wax paper, and decorate with red hots. Set aside, and allow to cool.

Candy Cane Bar Cookies





1 cup butter (2 sticks)


1 cup white granulated sugar


1 egg


1\4 teasp. Peppermint extract


1\2 teasp. Salt


2\3 cup finely crushed miniture candy canes (measure after crushing)


6 drops red food coloring


2 cups packed flour


1 cup chocolate chips (6 oz. bag)


2 cups chocolate chips (12 oz. bag)





Melt the butter in a microwave safe bowl for 1 minute 30 seconds on high. Set it on the counter to cool.





Place the sugar in the bowl add the egg, and beat with a mixer until it’s a uniform color.





Add the peppermint extract, salt, and finely crushed minitature candy canes. Mix it all up.





Add the 6 drops of red food coloring. Mix it in thoroughly.





Feel the bowl with the butter. If you can cup your hands around it comfortably, you can add it to your mixing bowl now. Mix it in slowly at low speed. If it’s still too warm to add, wait until it’s cooler and then do it.





Add the flour in half cup increments, beating after each addition.





Stir in one cup chocolate chips by hand.





Spread the batter evenly into a greased 9-13 inch pan. Bake at 350% for 25 minutes or until it feels firm on the top.





Remove the pan from the oven and sprinkle it with the remaining two cups of chocolate chips. Immediately cover with a inverted cookie sheet. Let it sit for three minutes. Then take of the cookie sheet, and spread out the melted chips like frosting with a spatula.





Cool completely and then cut into brownie sized squares.
