What's your favorite EASY Christmas cookie recipe?

I want to make some Christmas cookies with my kids that are easy and tasty.What's your favorite EASY Christmas cookie recipe?
there are so many.... i find it hard to pick just one!

Cardamom Snaps


prep. 25 min ; bake 8 min


ingredients:


3/4 cup shortening


1 cup packed brown sugar


1 tsp. baking soda


2 tsp. ground cardamom


1 tsp. ground cinnamon


1/4 cup mild-flavoured molasses


1 egg


2-1/4 cups all-purpose flour


1/4 cup granulated sugar





directions:


1. In a mixing bowl beat shortening with an electric mixer on medium to high speed for 30 seconds. Add the brown sugar, baking soda, 1-1/2 teaspoons of the cardamom, and the cinnamon. Beat on medium to high speed until combined. Beat in molasses and egg. Beat in as much of the flour as you can with the mixer. Stir in remaining flour.





2. Shape dough into 1-inch balls. Roll balls in mixture of granulated sugar and remaining 1/2 teaspoon cardamom to coat. Place balls 2 inches apart on an ungreased cookie sheet.





3. Bake in 375 degree F oven about 10 minutes or until edges are set and tops are slightly cracked. Cool on wire rack. Package 6 cookies in a small glass tumbler; seal with waxed paper; tie with string. Makes about 48 cookies.

Giant's Thumbprint Butter cookies





Ingredients





8 ounces (2 sticks) unsalted butter, softened at room temperature


2/3 cup sugar


1/4 vanilla bean, halved lengthwise, soft insides scraped out


1/8 teaspoon salt


2 cups plus 2 tablespoons all-purpose flour


1/4 cup apricot, raspberry, or another jam of your choice


Directions


Preheat the oven to 350 degrees. Butter a baking sheet.





In a mixer fitted with a paddle attachment (or using a hand mixer), cream the butter and sugar together until fluffy. Add the vanilla scrapings and salt and mix until incorporated. Add the flour and mix at low speed until incorporated. Using your hands, roll the dough into golf-ball-sized balls and arrange them 2 inches apart on the cookie sheet, flattening them out a bit as you go. Using your thumb, press the top of each cookie to make a shallow well. Roll your thumb back and forth to widen the well. Using a small spoon, fill the wells with jam. Bake until very lightly browned around the edges, 25 to 30 minutes. Let cool on the pan. Store in an airtight container.

Holiday Tree Cookie


Kids will love decorating their own Christmas Tree Cookie








Ingredients:











1 pkg. (16.5 oz.) NESTL脡庐 TOLL HOUSE庐 Refrigerated Sugar Cookie Bar Dough


Frosting, decorator icing, sugar sprinkles, candies and/or melted chocolate (optional)











Directions:


PREHEAT oven to 325掳 F. Grease large baking sheet.


Estimated Times:


Preparation - 10 min | Cooking - 20 min | Cooling Time - 30 min cooling | Yields - 12 servings





PLACE whole bar of dough in prepared pan. Allow to soften for 5 to 10 minutes. Using fingertips, pat dough gently to form tree shape.





BAKE for 20 to 23 minutes or until light golden brown. Cool on baking sheet for 2 minutes; carefully loosen cookie with spatula. Cool on baking sheet completely.





DECORATE as desired.
Shortbread...


4 cups of flour


1 lb of butter (I believe that's 4 sticks,,, about 2 cups)


1 cup of superfine sugar (I've never tried it with regular but I doubt it would make much difference)





Cream the butter and sugar together. Add in the flour and knead


Roll out to about 1/6 inch and bake at 300 degrees for about 30 mins (The recipe calls for 30 mins but I personally like them a little raw... about 20-25 mins)...





When your done you can ice them, just mix icing sugar with water and add a little almond extract... you can ice them with your fingers and add sprinkles or candies,,, you can add food coloring if you want.. Experiment with the consistency.. It should be a little watery.. If it starts to dry out, just add more water, or more icing sugar.





And you can eat the dough raw (which is really tasty) because it doesn't contain eggs! The icing really makes the shortbread :)
Alton Brown has an easy refrigerator cookie dough that makes great sugar/shortbread cookies that the kids can ice or decorate with colored sugar and candies. It takes about ten minutes to mix up and then you refrigerate for about a two hours and then you can roll and cut.

Here is a link to an email I received this morning. I usually make all of my cookies from scratch, but these are all made from Nestle's Toll House Sugar Cookie dough that comes in a tub. Very easy %26amp; they look homemade, too.

I would go with the first answer! Those are easiest, but kids still like to help. You could also make Hershey Kiss cookies (the peanut butter ones with the kisses on top), or make chocolate chip cookies but with christmas colored M%26amp;Ms instead of chocolate chips.
Buying pillsbury refrigerated cookies and then baking them :-]
