Any good easy cookie recipes?

Sandra Lee from TV Food Network has some recipes. Just to warn you though, there are some really inappropriate Sandra Lee-bashers, so some of her recipes have unnecessarily low reviews. I would read the recipes and reviews before nixing something.Any good easy cookie recipes?
The easiest cookies to make are Peanut Butter...





1 cup Peanut Butter


1/2 cup sugar


1 egg





Preheat oven to 350 degrees. Roll dough into balls and flatten with a fork. Bake for 10 minutes. DO NOT OVERBAKE!Any good easy cookie recipes?
Classic Butter Cookies


1 C. unsalted butter





2/3 C. sugar





bare pinch salt





2 1/2 C. all-purpose flour





Cream the butter until softened, then add sugar and salt. Fold in flour and mix to make a stiff dough. Knead gently on a lightly floured board to make the dough smooth.





You may otherwise place flour, salt and sugar in a food processor. Add butter in chunks and pulse to make a crumbly mixture. Turn out onto a lightly floured board and knead to make a stiff dough.





Wrap dough in plastic wrap or wax paper and chill in refrigerator for 15 minutes.





Preheat oven to 350 F. Line a large baking sheet with parchment paper.





Roll dough out to a thickness of 3/8 to 1/2 inch. Cut into rectangles or circles. Mark with the tines of a fork. Place cookies two inches apart on baking sheet and place in oven. Immediately reduce heat to 325 F. Bake until lightly browned (25 to 35 minutes). Reduce heat if cookies are browning too quickly.





Cool cookies on a rack.





You may also pat dough out into an 8 or 9 inch cake pan. Mark with fork tines and score into 10 to 12 wedges. Bake until lightly browned on edges.





Variations on the Classic Butter Cookie Dough





Cappuccino


Knead in about 1 T. of freeze-dried coffee into the dough.





Brown sugar


Replace white sugar with 3/4 C. brown sugar (light or dark).





Cashews


Add 1/3 C. toasted, ground cashews with flour.





Chocolate dip


Melt 4 oz. of semi-sweet chocolate. Dip cookies half into partially cooled chocolate. Allow to set.





Spice


Add 1 t. mixed pastry spice, apple pie spice, or 1/2 t. cinnamon and a 1/8 t. cloves, pinch ginger and allspice.





Linzertorte


Add spices as directed above and 1/3 cup ground hazelnuts. Add one teaspoon vanilla (when creaming butter). Roll thinly and bake half of cookies with a hole cut out. Spread raspberry jam on bottom halves and top with a cut out. Dust with confectioner's sugar.





Chocolate chip


Knead in 1/2 C. miniature chocolate chips into dough.














You can make all sorts of cookies with this simple butter cookie recipes....be creative and have fun!
EASY AND WONDERFUL NO BAKE COOKIES





2 cups white sugar


4 teaspoons cocoa


1/2 cup milk


1 stick butter


2 tablespoons peanut butter


1 teaspoon vanilla


3 3/4 cup quick oats


1 cup coconut





In a medium size saucepan combine sugar, cocoa, milk and one stick of butter. It's best for butter to be at room temperature.


Melt butter at medium heat and stir all ingredients together. Continue to stir until all ingredients come to a boil.





Once boiling, remove from heat and allow to stand for one minute.





Add vanilla and peanut butter and mix well. Stir in oats and coconut.





Put a large sheet of aluminum foil or wax paper out on the counter and place little scoops of your new treat on it. Serve while still warm or at room temperature.

EASY chocolate chip cookies...





* 2 3/4 cups all-purpose flour


* 3/4 cup white sugar


* 3/4 cup packed brown sugar


* 2 eggs


* 1 teaspoon vanilla extract


* 1 cup butter


* 1 teaspoon baking soda


* 2 cups semisweet chocolate chips








1. Mix together the sugar, brown sugar, and eggs until creamy.


2. Melt the butter or margarine over low heat and add to mixture. Add the remaining ingredients and mix well.


3. Drop by teaspoon about 2 inches apart on cookie sheets. Bake in a 350 degree F (180 degree C) oven for 5 to 7 minutes.
Easiest cookies ever (other then slice and bake)--


1c creamy peanut butter


1c sugar


1 egg





Mix together and scoop into balls (about 1Tbsp per cookie), bake at 325* for 5-7 minutes. Chewy peanut butter cookie- Yum!!
Here's one that is easy n delicious to make...hope u enjoy it!!





~PEANUT BUTTER COOKIES~





3/4 cup sugar





1 egg





1 tsp. baking SODA





1 tsp. vanilla





1 cup Peanut Buttter





Bake at 350* for 13~15 minutes. They will raise up and look very puffy,


but reach in the oven


before they are done and flatten them with a spatula or fork.


Choc. chips can also be added if you like.
