I need a easy cookie recipe, sugar cookies enough to make about 240 cookies?

Sugar Cookies approx 200 cookies Oven 400 degrees F


Pans size: 18 x 26 inch Sheet Pan





Measures Weight Ingredients





2 cups (10) [One lb ] Eggs


3 1/3 cups [One lb 8 oz.] Shortening


1 1/4 cups Water


3 tablespoons Vanilla


2 1/2 quarts [4 lb. 8 oz ] Sugar, granulated.


4 3/4 quarts [4 lb. 12 oz ] Flour,


[ wheat, general purpose, sifted]


1 2/3 tablespoons [One oz] Salt.


6 3/4 tablespoons [3 oz] Baking powder


1/4 cup [One and 1/4 oz ] Milk, nonfat, dry





Place ingredients in mixer bowl in order listed, beat at low speed 1 to 2 minutes or until smooth. Scrape down bowl once during mixing.





Divide dough into 10 pieces, about 1 lb 4 oz each. Form into rolls; slice each roll int 20 pieces





Sugar, granulated [6 oz ] 3/4 cup





Dip each piece in sugar; place sugar side up in rows, 4 x 6 on greased pans.





Flatten cookies to approximately 1/4 inch thickness.





Bake 10 minutes or until lightly browned.

3-1/3 cups vegetable oil


5 cups confectioners' sugar


3-1/3 cups white sugar


6-3/4 eggs


1 tablespoon and 1/4 teaspoon vanilla extract


15 cups all-purpose flour


1 tablespoon and 1/4 teaspoon baking soda


1 tablespoon and 1/4 teaspoon cream of tartar


1-2/3 cups white sugar for decoration





Preheat oven 350 degrees F (175 degrees C).





In a large bowl, cream together the butter, oil, confectioners' sugar, and 1 cup white sugar until light and fluffy. Beat in eggs one at a time, and stir in the vanilla. Combine the flour, baking soda, and cream of tartar; stir into the creamed mixture. Roll dough into 1 inch balls, and then roll the balls in remaining white sugar. Place onto ungreased cookie sheets, and flatten with a fork.





Bake for 8 to 10 minutes in the preheated oven, or until the edges begin to brown. Cool on wire racks.

Sour Cream Sugar Cookies - scaled for 240 cookies


INGREDIENTS


12 cups sifted all-purpose flour


2 tablespoons and 2 teaspoons baking powder


2 teaspoons salt


3 cups butter


3 cups white sugar


4 egg

1 tablespoon and 1 teaspoon vanilla extract


DIRECTIONS


Sift flour, baking powder, and salt. Cream butter with sugar, beat in egg, then stir in sour cream and vanilla. Stir in flour mixture 1/3 at a time.


Wrap dough in wax paper and chill.

Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.


In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.


Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Early in the day or the day before:


In a large bowl cream the shortening and the sugar. Add the eggs, extract, and milk. In a medium bowl mix the dry ingredients with a wire whisk. Add the dry ingredients to the large bowl. Mix with mixer until well combined. With hands, shape dough into a ball. Wrap with plastic wrap and refrigerate for 2 to 3 hours.





Preheat oven to 400 degrees F. Lightly grease cookie sheets. Roll half or 1/3 dough at a time, keep the rest refrigerated. For crisp cookies, roll dough, paper thin. For softer cookies, roll 1/8 '; to 1/4'; thick. Place cookies 1/2 inch apart on cookie sheets. Bake 8 minutes or until very light brown.











Easy Sugar Cookies

5 package Active Dry Yeast


21/2 cup warm water


5 cup real butter


11 1/4 cups all purpose flour


5 tablespoon vanilla extract


21/2 cup sugar





Directions:


Preheat oven to 375. Soften yeast in warm water. Cream butter in large mixer bowl. Blend flour, yeast, and vanilla extract in at low speed bit by bit. Shape dough into 1 1/2 inch balls. Then, simply roll each ball in the granulated sugar! Place sugar cookies on greased cookie sheets. For light, chewier cookies, let them rise in a warm place (on top of the stove as it's pre-heating works well) for 15 minutes before baking. Bake at 375 degrees for 20 to 25 minutes.
