This one is fun to make. Can add faces to them with raisins, nuts, M%26amp;Ms, coconut, etc.





No Bake Pumpkin Oatmeal Cookies


Yield: 10 servings


1 cup oatmeal


1 1/2 tsp sugar


1/4-1/2 tsp pumpkin pie spice


2 1/2 Tbsp pumpkin puree


1/4 cup packed brown sugar


a pinch of salt


1/4 cup raisins (can use food process to chop them smaller)


2 Tbsp powdered sugar


1/4 tsp cinnamon





Combine everything (except for the cinnamon and Powdered sugar) in a large bowl, starting with the oatmeal and ending with the pumpkin.





Roll dough into 3/4 inch balls.





Combine powdered sugar and cinnamon in a shallow bowl, and then roll the balls of cookie dough in the sugar.

Cake Mix Cookie


1 package of cake mix (any flavor)


1 large egg


1/4 cup of oil


1/4 cup of water


1 cup of chopped nuts, raisins, oatmeal, coconut, chocolate chips, M%26amp;M'S庐 etc. (anything you like in cookies)





Heat oven to 350 degrees. Combine cake mix, egg, oil, and water. Beat until well blended.





Stir in remaining ingredient(s).





Drop by teaspoon about 1 inch apart onto greased cookie sheet.





Bake for 15 minutes or until done. Makes about 4 dozen.

Elephant Ears


Popular at outdoor fairs and amusement parks this treat is often topped with cinnamon, ice cream, lemon, apple pie filling and more. This recipe is modified a bit- it is baked and not fried- so lower in fat than the original, fried elephant ear.





1/4 Cup butter, melted


1 Cup flour


3 tbsp. sugar


1/2 tsp. salt


1/2 tsp. baking powder


1/3 c. milk


3 tbsp. sugar


1 tsp. cinnamon


Sugar





Stir flour, sugar, baking powder and salt in bowl.





Add milk and 2 Tbsp. of the melted butter and stir until until dough forms.





Knead dough 10-12 times on a lightly floured surface. Roll dough into a rectangle, about 9 x 5 inch.





Brush with remaining butter, using a pastry brush. Sprinkle sugar and cinnamon mixture.





Roll up tightly, jelly roll style. Pinch edges of dough into roll to seal. Cut into 4 equal pieces.





Place cut sides up on cookie sheet, then pat down so they are 6 inches across. Sprinkle with more sugar.





Bake 8 to 10 minutes at 350 degrees. Makes 4 elephant ears.

Variety Pack Cookies (can make so many different kinds of cookies, freeze, then slice)


4 1/3 c. sifted flour


1 tsp. baking soda


1/2 tsp. salt


1 1/2 c. vegetable shortening


1/2 c. butter or margarine softened


1 c. granulated sugar


1 c. firmly packed light brown sugar


2 eggs


1 tsp. vanilla





Beat shortening, butter and sugars until well mixed; beat in eggs and vanilla.





Stir together flour, baking soda and salt.





Add flour mixture to egg mixture and stir to combine until soft dough forms.





Divide dough into 6 equal portions; shape into rolls about 1 1/2 inches in diameter, wrap each in plastic wrap or foil and freeze.





Or, if you prefer, flavor the different portions as directed below.





To bake, slice solidly frozen rolls about 1/4-inch thick; arrange cookies 2-inches apart on ungreased cookies sheets and bake in 350 degrees oven for 10 minutes, until lightly browned.


Transfer at once to wire rack to cool.





Variations


Coconut Cookies: Mix 1/2 cup flaked or toasted coconut into one sixth of master recipe dough. Shape and freeze.





Slice and bake as directed. Makes 30 cookies.





Nutty Cookies: Mix 1/2 cup coarsely chopped pecans, walnuts or peanuts into one sixth of


master recipe dough.


Shape and freeze.





Spicy Cookies: Mix 1/2 to 1 teaspoon ground cinnamon and 1/4 to 1/2 teaspoon ground nutmeg or mace or 2 teaspoons pumpkin pie spice into one sixth of the master recipe dough.


Shape and freeze.





Chocolate Cookies: Mix 1 square melted and cooled unsweetened chocolate into one sixth of the master recipe dough. If desired, add 1/2 cup coarsely chopped nuts.


Shape and freeze.





Cherry Cookies: Mix 1/4 c. finely chopped candied cherries (both red and green are nice for Christmas) in one sixth of the master dough.


Shape and freeze.





Butterscotch or Maple Cookies: Mix 1/2 teaspoon of butterscotch or maple flavoring into one sixth of the master recipe dough.


Shape and freeze.

Snickerdoodles are always fun for the kids to help with. They can roll the dough into the balls and then into the cinnamon sugar and place on the baking pan. When the pan is full, they can take turns using a juice glass to flatten the balls some before baking.





I won't bother with typing out a recipe because they're easy enough to find online.
Sugar cookies are always fun. They can help make the dough, roll the dough, cut the cookies (cookie cutters) and decorate them as well using frosting and candies.
no bake cookies are easy and kid friendly and i know these are not cookies but rice krispie treats are always fun
