Momma's Chocolate Oatmeal cookies


2c sugar


1/4lb margarine (better if you use real butter)


1/2c milk


4tsp cocoa


Put 1st 4 ingredients in pot to bring to a boil. 5-10 minutes, then add


2 1/2c oats


1/2c peanut butter(with or without nuts)


1-2tbsp real vanilla


stir in until thoroughly mixed. Drop onto wax paper til cool. should make around 20-24 cookies.MMMMM :)








Chocolate Chip Cookie recipe


3/4 cup white sugar


3/4 cup brown sugar


1 cup butter


1 egg


2 1/4 cup flour


1 tsp. baking soda


1/2 tsp. salt


2 cups chocolate chips


Cream butter and sugar together. Add egg and mix until blended. Add remaining ingredients and stir/mix just until ingredients are blended together. Bake at 375 degrees for 8-10 minutes.











Mom's Pecan Sandies Recipe


, 1 cup butter


1/3 cup white sugar


1/3 cup gound pecans


2 tsp. water


1 tsp. vanilla


2 cups all purpose flour


Cream butter and sugar together. Add remaining ingredients and mix well. Roll each cookie into a 1inch ball. Bake at 350 for 10-15 minutes. Roll each cookie in icing sugar while warm.











Shortbread Cookie Recipe


1/2 cup corn starch


1 cup flour


1/2 cup icing sugar


3/4 cup butter


Cream butter and sugar, then add remaining ingredients. Mix well. Roll out dough on a floured surface until dough if 1/8 inch think. Cut into shapes with cookie cutters. Sprinkle with coloured sugar, sprinkles or silver candy balls. Bake on an ungreased pan at 300 for 20-25 minutes.








Sugar Cookie Recipe


1/2 cup butter, preferably unsalted, softened


1 cup white sugar


2 cups all-purpose flour


1/2 tsp. baking powder


1/4 tsp. salt


1 egg, lightly beaten


1 tsp. lemon extract


1 tbsp. milk


Icing


1 to 1/2 cups sifted icing sugar


1 egg


Food coloring, sprinkles, decorations of choice


Line baking sheets with parchment paper, or lightly grease baking sheets. Using an electric mixer, beat butter with sugar until fluffy. In a separate bowl, sift flour with baking powder and salt. Beat into butter mixture until well blended. Beat in egg, lemon extract and milk until combined.


Divide dough into 2 pieces; shape each into flattened rounds. Wrap in plastic wrap and refrigerate 1 hour. Before rolling out dough, preheat over to 350F. Foll out dough with floured rolling pin on a floured surface, until dough is 1/8-inch thick. Cut into shapes with cookie cutter, setting on baking sheet about 1 inch apart. Bake 8 to 10 minutes.





Let cookies coll on baking sheets for 5 minutes, then cool completely on a rack. Meanwhile, beat icing sugar and egg white together to a spreading or piping consistency. If necessary, thin with a little water or milk. Put icing into some small bowls and tint with food colouring if desired. Decorate cookies with icing, sprinkles %26amp; decorations of choice. Makes about 3 1/2 dozen, 2-inch cookies








CHOCOLATE CHIP BISCOTTI


2 cups flour


1/2 tsp baking soda


1/4 tsp salt


2 large eggs, room temp


1/2 cup sugar


1/2 cup packed brown sugar


1 tsp vanilla extract


1 cup mini semisweet choc chips


1/2 cup chopped pecans, or your favorite nut


Preheat oven to 350. Line two baking sheets with parchment paper, set aside. In medium bowl, whisk together flour, baking soda and salt. In large bowl, beat together the eggs, sugar, brown sugar on the high speed of an electric mixer until pale and thick. Beat in the vanilla. Reduce speed to low and stir in the flour mixture until just combined. Stir in the chips and nuts. Divide the dough into thirds and arrange in 12 inch logs on prepared pans. space logs 3 inches apart. Pat the tops smooth and flatten slightly. Bake for 30 min, until the logs are firm to the touch and the tops are beginning to show cracks.


Remove from the oven and place baking sheets on wire rack to cool. Reduce the oven temp to 325. Loosen the logs with metal spatula and let cool 10 min. Slide baked logs onto a cutting board. With a long serrated knife, cut the logs diagonally into 1/2 inch slices. Arrange the slices, cut side down on the baking sheets. Bake for 7-8 min on each side or until dry and crisp. Remove from oven and place on wire rack to cool. Store in an airtight container for up to 1 month or freeze for up to 3. May be decorated with melted chocolate.








Peanut Butter Oatmeal Chocolate Chunk Cookies


1 cup flour


1 cup old-fashioned or quick-cooking oats


1/2 tsp. baking soda


1/2 tsp. Baking Powder


1/4 tsp. salt


1/2 cup (1 stick) butter, softened


1/2 cup granulated sugar


1/2 cup firmly packed brown sugar


1/2 cup peanut butter


1 egg


1-1/2 tsp. vanilla


6 squares BAKER'S Semi-Sweet Baking Chocolate, coarsely chopped


PREHEAT oven to 375掳F. Mix flour, oats, baking soda, baking powder and salt; set aside. Beat butter, sugars and peanut butter in large bowl with electric mixer on medium speed until light and fluffy. Add egg and vanilla; mix well. Gradually add flour mixture, mixing until well blended after each addition. Stir in chocolate.


DROP heaping tablespoonfuls of dough, 2 inches apart, onto ungreased baking sheets.


BAKE 10 to 12 min. or until lightly browned. Cool 1 min.; remove from baking sheets to wire racks. Cool completely





Chocolate Chip Pudding Cookies


2 1/4 cups flour


1 teaspoon baking soda


1 cup soft butter


1/4 cup granulated sugar


3/4 cup brown sugar


1 teaspoon vanilla


2 eggs


1 package (12 oz.) chocolate chips


1 cup nuts (opt.)


1 package (4 serving size) INSTANT pudding %26amp; pie filling


Mix flour with baking soda. Combine butter, the sugars, pudding mix and vanilla in large mixer bowl; beat until smooth and creamy. Beat in eggs; gradually add flour mixture, then stir in chips and nuts. Batter will be stiff. Drop by rounded teaspoonfuls onto ungreased baking sheets, about 2 inches apart. Bake at 375 degrees for 8 to 10 minutes. Makes about 7 dozen.





Easy Chocolate Chip Cookies


1/2-1 cup softened butter


2 eggs


1 cup brown sugar


1 tablespoon vanilla


2 cups flour


1 teaspoon baking powder


1 bag chocolate chips


Mix butter, eggs, brown sugar and vanilla together.


Add flour (1 cup at a time) to mixture.


Next add baking powder and chocolate chips.


Bake in oven at 350 degrees for about 15-20 minutes.





Easier Chocolate Chip Cookies


1 package butter pecan, chocolate chip, chocolate fudge, devil's food, German, chocolate or yellow cake mix


1/2 cup butter or margarine -- softened


1 teaspoon vanilla


2 eggs


1/2 cup chopped nuts


1 (6 ounce) package semisweet chocolate chips (1 cup)


Heat oven to 350潞. Combine half of the dry cake mix , butter, vanilla and eggs in large bowl and mix until smooth. Stir in remaining cake mix, nuts and chocolate chips. Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 10 to 12 minutes or until edges are set (centers will be soft). Cool 1 minute; remove from cookie sheet to wire rack.








Fry Pan Cookies


1 1/2 cups chopped dates


2 eggs


1 cup sugar


1/4 cup butter


1 teaspoon vanilla


1/4 teaspoon salt


3 cups rice Krispies


1/2 cup chopped nuts


chopped coconut


Combine first 6 ingredients in a frying pan over low heat. Cook for 10 minutes, stirring constantly. Cool, add 3 cups of rice krispies or a similar cereal, and 1/2 cup chopped nuts. Mix the cereal into the date mixture well. Form into balls and roll each ball in chopped coconut.

2 cups granulated sugar


1/2 cup evaporated milk


2 tablespoons cocoa


4 ounces butter


1 teaspoon vanilla extract


1/2 cup chopped pecans


2 1/2 cups quick-cooking oats


Combine sugar, milk, cocoa, and butter in a medium saucepan. Bring to a boil over medium heat, stirring constantly; boil for 1 minute. Remove from heat; stir in vanilla and chopped nuts. 3 cups sugar


1 1/2 cups dark corn syrup


3 cups peanut butter


15 cups cornflakes


Combine sugar and syrup; bring to a boil stirring constantly. Remove from heat. Add peanut butter and cornflakes. Mix well. Spread mixture onto a greased cookie sheet. Cut into squares.





No Bake Chocolate Squares


3 cups miniature marshmallows (about half of 10 1/2 ounce package)


1 cup (6 ounce package) semisweet chocolate chips


1/3 cup butter


2 cups quick or old fashioned rolled oats


1 1/2 teaspoons vanilla or rum extract


1/4 cup finely chopped pecans


In saucepan over low heat, melt marshmallows, chocolate chips, and butter, stirring frequently, until smooth. Stir in oats and flavoring. Spread mixture into a buttered 8-inch square pan; sprinkle with the chopped pecans. Chill thoroughly until set. Store candy in a cool dry place in covered container.

German Chocolate Cookies








Really Really Fast Cookies. Taste like a cross between brownies and German Chocolate Cake.





1 pkg German chocolate cake mix


2 eggs


1/2 cup butter or margarine melted


1/2 cup quick cooking oats


1 cup semi-sweet chocolate chips


1/2 cup raisins





In a mixing bowl, combine dry cake mix, eggs, butter, oats, mix well.





Stir in the chocolate chips and raisins. Drop by heaping teaspoon 2 inches apart onto cookie sheets covered with foil (that way you don't have to wash them).





Bake at 350 degrees for 9-11 minutes or until set. Cool and eat or eat warm.

Seven Layer Magic Bars





Makes about 36


1/2 cup butter or margarine


1 1/2 cups graham cracker crumbs


1 14-oz. can sweetened condensed milk


1 cup butterscotch flavored chips


1 cup semi-sweet chocolate chips


1 1/3 cups flaked coconut


1 cup chopped pecans





Preheat oven to 350掳, (325掳 for glass dish). Line a 13x9-inch baking pan with a sheet of foil, making sure to cover the sites well. Place the butter in the baking pan and melt it in the oven. Sprinkle crumbs over butter; pour condensed milk evenly on top of crumbs. Top with remaining ingredients in order listed; press down firmly with fork. Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars. Store covered at room temperature.
These are addictive, so consider yourself warned :)

* 2 teaspoons vanilla extract


* 4 cups all-purpose flour





DIRECTIONS





1. Preheat oven to 350 degrees F (180 degrees C).


2. Cream butter and sugar until fluffy. Stir in vanilla; add flour and mix well.


3. Put through cookie press and form cookies onto baking sheets. (Or you can just roll them in balls and slightly flatten them, but handle quickly or the butter will get too warm and they'll spread). Bake for 10 minutes. Cool one minute and transfer to wire rack.
