Elegant PopUp Jam Filled Cookies w/ Glaze Recipe





This is another lovely recipe I found online,and decided to pass along.I hope you enjoy it!





2 cups all-purpose flour


1/8 teaspoon salt


1 1/3 cups cold butter


2/3 cup sour cream


water


2/3 cup apricot fruit spread or raspberry spreadable fruit or peach fruit spread





Topping





1/2 cup powdered sugar


2 tablespoons almond flavored liqueur or orange juice





In large mixing bowl,add the salt%26amp; flour,cut in the butter until mixture is crumbly.


Add the sour cream,stirring until dough forms to a ball (few minutes).


Cover,%26amp; chill until firm (at least 1 hour).


Heat oven to 400.


Roll dough on a lightly floured surface,using one-third at a time (chill rest of dough) Roll to 1/8-inch thickness and cut with 1 1/2-inch round cookie cutter.


Put half of circles 1 inch apart onto ungreased cookie sheet.


Cut small circle with 3/4-inch round cookie cutter in center of remaining circles.


Brush one side of donut shaped cookies with water.


Put on top of the circles on baking sheet,moist side down.


With rounded 1/4 teaspoonful,add fruit spread to centers of cookies.


Bake 9-11 minutes, or until golden%26amp; puffy.


Let cookies cool thoroughly.


Stir thr powdered sugar%26amp; liqueur in a small bowl.

Since I'm not sure exactly what you are looking for... Try looking at kraftfoods.com. They have some great recipes, all have the approximate time it takes and there are lots of really easy, really good recipes. I love this sight. I've gotten a lot of really good ideas %26amp; you can save any recipe.
Pecan Shortbread





1 1/2 C. butter


1 C Sugar


1 egg


1tsp vanilla


3 C all-purpose flour


1 tsp baking powder


1/2 tsp salt


1 c chopped pecans





Blend butter and sugar, add egg and vanilla. mix flour, baking powder , salt and pecans in seperate bowl..gradually add to butter mixture. roll into tsp size balls and bake at 375 for 8 min. or until firm. You only want them lightly golden...This is a wonder buttery light cookie. I make them all the time. Hope you enjoy!!
These are very delicate and delicious cookies. Handle carefuly until they are cooled.





MELTING MOMENTS COOKIES


1 CUP FLOUR


1/2 CUP ARGO CORN STARCH


1/2 CUP CONFECTIONERS SUGAR


3//4 CUP MARGARINE


1 TEASPOON VANILLA


IN BOWL STIR TOGETHER FIRST 3 INGREDIENTS. IN LARGE BOWL WITH MIXER AT MEDIUM SPEED BEAT MARGARINE UNTIL SMOTH. BEAT IN FLOUR MIXTURE AND VANILLA UNTIL WELL BLENDED. REFRIGERATE 1 HOUR. SHAPE INTO 1 INCH BALLS PLACE ABOUT 1 1/2'; APART ON UNGREASED SHEETS; FLATTEN WITH LIGHTLY FLOURED FORK. BAKE 375* 10-12 MINUTES OR UNTIL EDGES ARE LIGHTLY BROWNED. MAKES 3 DOZEN





CHOCOLATE


SIFT 1/4 CUP COCOA %26amp; 1/4 TEASPOON SALT WITH DRY INGREDIENTS





PECAN CINNAMON


ADD 1/2 CUP FINELY CHOPPED PECANS AND 1 TEASPOON CINNAMON TO FLOUR MIXTURE.
Pecan shortbread cookies are really good.





You can use a choc chip recipe like Toll House and sub regular chips with white choc chunks, then add dried cranberries. Some orange extract instead of vanilla?? That would be fabulous.





You can make oatmeal cookies, use dried blueberries or cranberries instead of raisins. Peanut butter in oatmeal cookies is insanely good.





You can make sugar cookies with a twist, use presweetened lemonade like Country Time as a straight substitute for white sugar, pink would be prettier. Don't try this with sugar free drink mix, but you can make the mix yourself with unsweetened koolaid and add your own sugar according to pouch directions, then add the amount needed for your recipe. For a kid variation, use any flavor of koolaid.





Rachael Ray makes a no bake thing with bourbon and pecans.





You can do strawberry shortcakes for a single serve thing.
I think elegance can be derived from not only ingredients, but presentation as well. I'm not sure how elegant these ingredients are, but most people will not be able to pinpoint the ingredients without your help -- and served in the proper way, this may be just what you're looking for. I originally found the recipe on the back of the Heath baking bits, but I'm reprinting from the Hershey's website. The recipe is extremely easy and very quick...and makes a TON of cookies. 6 dozen, to be exact. Oh yeah -- no chocolate!





Brickle Drop Cookies





Ingredients:


1 cup (2 sticks) butter or margarine, softened


1 cup granulated sugar


1 cup packed light brown sugar


1 teaspoon vanilla extract


1/2 teaspoon salt


3 eggs


3-1/2 cups all-purpose flour


2 teaspoons baking soda


2 teaspoons cream of tartar


1-1/3 cups (8 oz. pkg.) HEATH BITS 'O BRICKLE Toffee Bits





Directions:


1. Heat oven to 350掳F. Lightly grease cookie sheet.





2. Beat butter, granulated sugar, brown sugar, vanilla and salt in large bowl until blended. Add eggs; beat well. Stir together flour, baking soda and cream of tartar; gradually add to butter mixture, beating until blended. Stir in brickle. Drop by heaping teaspoons onto prepared cookie sheet.





3. Bake 8 to 10 minutes or until lightly browned. Cool slightly. About 6 dozen cookies.
CARROT COOKIES


1 cup shortening (part soft butter)


3/4 cup sugar


2 eggs


1 cup mashed cooked carrots


2 cups flour


2 Tablespoon baking powder


1/4 teaspoon salt


3/4 cup shredded coconut


Mix shortening, sugar, eggs and carrots. Blend in flour, baking powder and salt. Stir in coconut. Drop dough by teaspoons; 2 inches apart onto lightly greased baking sheet.


(I use parchment paper instead)


Bake @ 375 degrees for 8 to 10 minutes or until no imprint remains when touched. Remove from baking sheet and cool on wire racks. Frost with Orange Frosting.





ORANGE FROSTING:


3 Tablespoons soft butter or margarine


1 1/2 cups confectioners sugar


2 Tablespoons grated orange peel


up to 1 Tablespon orange juice


Blend butter and sugar together. Stir in orange peel and juice. Beat until frosting is smooth and of spreading consistency.


(I usually double the frosting recipe per batch of cookies)





JAM BARS:


1 1/2 cups sifted flour


1/2 teaspoon baking powder


1/2 cup butter


1/2 cup sugar


1/2 teaspoon almond extract


1 egg


3/4 cup jam or preserves *


1/2 teaspoon cinnamon


1/4 teaspoon ground cloves


Sift together flour and baking powder in a small bowl and set aside.


In a large bowl cream butter, sugar and almond extract. Beat in egg thoroughly.


Add sifted dry ingredients to butter mixture and stir to blend.


Spread a little less than half the dough into a greased baking pan


(about 11 x 7 x 2 in.)


In a small bowl, mix jam with cinnamon and ground cloves. Spread over dough. Drop remaining dough in blobs over jam; spread carefully with small spatula.


Bake in hot oven @ 400 degrees for about 20 minutes. Put on rack to cool; cut into squares.


* I use orange marmalade or grape jelly.





PRIDE OF IOWA COOKIES:


1 cup shortening


1 cup brown sugar, packed


1 cup granulated sugar


2 eggs, beaten


1 teaspoon vanilla extract


2 cups flour, sifted


1 teaspoon baking soda


1 teaspoon baking powder


1/4 teaspoon salt


1 cup flaked coconut


1/2 cup chopped walnuts


3 cups rolled oats, quick-cooking


Cream together; shortening and both sugars.


Beat in eggs and vanilla. Sift flour, baking soda, baking powder and salt and add to egg mixture. Blend well. Stir in coconut, walnuts and rolled oats. Drop by teaspoonfuls onto greased cookie sheet.


(I use parchment paper instead)


Bake at 375 degrees for 8 to 10 minutes. Cool on wire racks.
I wanted to say snickerdoodles but somebody beat me to it. Dang! Thumbs up to that person. Snickerdoodles are best simple non-choc cookies.
Everyone loves a good homemade snickerdoodle:





INGREDIENTS:


1/2 cup butter, softened


1/2 cup shortening


1 1/2 cups white sugar


2 eggs


2 teaspoons vanilla extract


2 3/4 cups all-purpose flour


2 teaspoons cream of tartar


1 teaspoon baking soda


1/4 teaspoon salt


2 tablespoons white sugar


2 teaspoons ground cinnamon








DIRECTIONS:


Preheat oven to 400 degrees F (200 degrees C).


Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls.


Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.


Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.
If I am craving something sweet, I either make Oatmeal Raisin cookies- follow the recipe for chocolate chip cookies but don't add the chocolate chips..This is sweet and healthy too.


look at the back of a bottle of Molasses and do some molasses cookies - they have no chocolate and with a small glass of milk they are great...If you cook them for a little less time in the oven they come out chewy not hard...and they are very easy to make mix altogether frig. for hour and drop by spoonfuls on cookie sheet.
