At home, we generally make these in ring or spiral shapes, but they can be easily formed into any shape by creative hands. Because the cookies are small and the strips of dough are fun to work with, kids have a great time coming up with their own shapes.





INGREDIENTS:


1 cup of unsalted butter, softened (1/2 pound or 2 sticks)


1 cup of sugar


3 eggs


1 teaspoon of grated orange peel


1 tablespoon of baking powder


4 cups of all-purpose flour


PREPARATION:


In a small bowl, combine the flour and baking powder with a whisk.





In another bowl, cream the butter and add sugar gradually. Beat the eggs until light and add to the butter-sugar mixture, beating well.





Add the flour and baking powder mixture slowly, blending to make a soft and malleable dough.


Preheat oven to 375掳F (190掳C).





To shape each ring, pull off a piece of dough the size of a walnut and roll it out by hand into a rope about 4 inches long. Form a circle (or other shape) with it, and place on an ungreased cookie sheet, leaving some distance between the cookies. Brush the tops lightly with beaten egg and bake at 375掳F (190掳C) for 20 minutes or until golden brown.





Cool on racks.
GREEK KOULOURAKIA COOKIES





1/2 lb. butter (no butter)


1 c. yellow Crisco


1 c. orange juice or milk


6 eggs


2 3/4 c. sugar


3 tsp. baking powder


2 tsp. baking soda


2 tsp. vanilla


Flour to make soft dough and don't stick





Shape cookies in twist. Brush with beaten egg yolk and sprinkle sesame seeds on top. Now that's Greek way you can just frost the cookies also. Bake 375, 12-15 minutes. Makes a lot.

1/2 Teaspoon Baking Soda


4 Tablespoon Brandy


2 1/2 Teaspoon Cinnamon


1 2/3 Cup Flour (Self-rising )


5 oz Olive Oil


1 Whole Oranges (Squeezed)


1 Pinch Salt (To taste)


4/5 Cup Sugar


3/4 Cup Walnuts


2/3 Cup Water





Directions:


Beat the oil and 1/3 c sugar well, add the brandy, orange juice and 1/2 tsp cinnamon and blend.





Sift the flour with a pinch of salt and the soda and add it gradually into the oil and sugar mixture, mixing it with a spoon.





Knead the dough well for about 10 minutes.





If too sticky, add 1-2 tablespoons more flour and mix it well.





Knead until it feels soft and pliable.





Flour your hands and take egg-sized portions of dough.





Roll and shape them into small oval shapes.





Place on an unbuttered baking sheet, and flatten them with the palm of your hand.





Bake in a pre-heated oven, gas no. 4/ 350 grades F/ 180 grades C), for 25 minutes.





Let them cool and harden for 24 hours before dipping them in the honey syrup.





Prepare the syrup by mixing in a saucepan the honey,1/2 c sugar and water.





Bring slowly to the boil, skim with a spoon, then simmer for 4-5 minutes.





Dip the cold melomakarona in the hot syrup, three or four at a time only.





Let them stand for 1 minute and take them out with a slotted spoon.





Place on a decorative platter and immediately sprinkle with a little cinnamon and chopped walnuts.
Just make sugar cookies and put green food coloring in them.
